Happy Friday everyone! At last! I’m off to Batavia, NY today for a family reunion, so I’m especially excited for this weekend!
One of the features of our family reunion is a 5K. I was planning on training a a little more intensely than I have been in preparation for this event, but the excitement and distractions of NY impinged slightly on those plans. That
said, I went on a brief run with a friend along the Hudson two days ago, and this morning I got up early to head down to the gym in the basement of my building. The gym isn’t anything fancy, but I got a nice elliptical workout in.
After my active start morning, I was pretty hungry. My farmer’s market kale (only $3!) is still going strong, so I cooked up a little egg stir-fry for myself. I ripped up some kale and sliced a mushroom into a pan, and drizzled a little olive oil over both. I started those stir frying for a minute or so, to let them saute a bit, before adding the egg. I scrambled up the egg, added two fresh basil leaves (torn into little pieces), sprinkled on some garlic salt, and transferred it all to a plate. Delicious, beautiful, and filling! I finished off my breakfast with a few pieces of Endangered Species Hazelnut Toffee Chocolate. Who says chocolate can’t be a breakfast food? 🙂
