I finished off my spinach over the weekend, so this morning I headed to the farmer’s market – how fabulous that it’s open on Mondays! After a workout in the basement gym of my building, I showered and headed off.
I was planning to get spinach, but saw kale and was intrigued, so I picked up a big bunch of it for only $3. I thought about getting radishes too, but couldn’t find the $1 ones I’d seen on Saturday – the pickings are a little less extensive on the weekdays. Then I headed back to make my breakfast.
Nothing fancy, but quick and delicious: I ripped up some kale, chopped part of tomato, piled a freshly-fried egg on top, and added some basil and garlic. You could add any other veggies you happen to have on hand to this – avocado would be an especially great addition, I think! Happy Monday everyone!
